Breakfast Burrito Recipe

Ingredients:

  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 cup diced potatoes
  • 1/2 cup diced tomatoes
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup shredded cheddar cheese
  • 6 large flour tortillas
  • Guacamole, salsa, and sour cream for serving (optional)

Instructions:

  1. In a large bowl, whisk together the eggs, milk, salt and pepper.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced bell pepper, onion and potatoes and sauté until they are cooked and softened.

  5. Stir in the diced tomatoes and black beans, cook for another minute.
  6. Pour in the egg mixture and stir, cook until the eggs are set.
  7. Stir in the shredded cheese.
